Résumé:This essay intends to demonstrate the origin and the history of the citrus medica fruit (in Hebrew: ’etrog) as an element of Jewish liturgy (the festival of Sukkot), starting from the Torah and Rabbinic texts up to later chronicles, which bear witness to the importance of the production and sale of ’etrogim. Special mention is made of certain Italian regions, which supplied Jewish communities all over Europe with this indispensable fruit.
